Geal - Scots gaelic - meaning white
Pochle Geal is a Scottish apple eau de vie or fruit spirit and is the product of two years of research and development.
If you can think of whisky as a distilled beer, then think of Pochle as a distilled cider – fermenting then distilling the fruit to create a clear spirit that derives its flavours from just three ingredients: apples, yeast and water.
We have laid some spirit to rest in a mixture of oak casks, including bourbon casks, bespoke Pedro Ximenez ¼ casks and virgin American oak firkins and once aged Pochle Geal will have become a brandy. A cider brandy.
Cider brandies have been around since the late 1500’s and in the UK since the late 1600’s.
It is not a new spirits category just one that has been somewhat forgotten but reflects the sustainability and community values that are important to us.
In the future we intend to release Pochle ‘Ciùin’ and limited-edition single casks of Pochle ‘Eòlach’ as the spirit matures and takes on the influences of wood and time. A portion of our white spirit will also be kept in glass for future blending and ageing.
